FRIED CHICKEN WITH FERMENTED BEANS
1/2 chicken, weighs 400g
1 tbsp fermented black beans, diced
2 tbsps garlic, diced
2 tbsps shallot, diced
2 small red chillies, diced
2 quarters of dried tangerine peel, diced
1 green pepper, quartered
1/2 tbsp ginger, diced
2 tbsps water chestnut powder
1/4 can chicken stock
Marinade:
1 tbsp light soy sauce
Seasonig:
1 tbsp chicken powder
3 tbsps dark soy sauce
2 tbsps granulated sugar
2 tbsps wine
Sauce:
1/4 tsp cornflour
2 tbsps water
- Chop chicken, marinate with light soy sauce, and combine with water chestnut powder.
- Heat half wok of oil, stir fry garlic and shallot until fragrant, add chicken and stir fry until slightly brown. Remove all the ingredients and drain the oil.
- Pour 2 tbsps of oil into the wok, and stir fry fermented black beans, diced ginger, red chillies and dried tangerine peel until fragrant. Return chicken, garlic and shallot, add seasoning, combine and sizzle wine. Add chicken stock and green pepper, cover the wok and stew for 2 minutes. Put sauce ingredients into the wok, combine, dish up and serve immerdiately.
