BAKED GAROUPA FILLET WITH GARLIC
10 oz garoupa fillet 1 tsp crushed garlic 1/2 shredded onion 3 lettuce leaves cornflour 1 tsp wine 1 chilli 1/2 tsp crushed chilli Marinade: 1/4 tsp salt a pinch of pepper 1 tbsp egg white(add separately) Dipping sauce ingredients: 1/2 tsp crushed onion 1 tbsp lemon juice 2 tsp white sugar 1/8 tsp salt a pinch of chilli dices 1 tbsp cold boiled water



 
  1. Wash fillet. Wipe dry. Cut into thick shreds. Add marinade ingredients. Marinade for 15 minutes. Coat with cornflour. Deep fry over medium heat until crispy. Dish up and drain.

  2. Heat wok. Add 1 tbsp oil. Saute onion , crushed garlic and crushed chilli until fragrant. Sprinkle with a little salt. Stir fry. Return fillet. Sizzle wine. Cover and bake for 10 seconds. Put onto lettuce leaves. Serve with dipping sauce while hot. Garnish with chilli.
