ABALONE WITH MUSTARD GREEN
1 can fine abalone
12 stalks mustard green
1 whole piece spareribs, 300g
2 slices Jinhua ham
1 small dice rock sugar
2 slices ginger
2 sprigs spring onion
1 tbsp cooked oil
Seasoning:
1 tsp oyster sauce
1/2 tbsp dark soy sauce
Sauce:
1/3 tsp cornflour
2 tbsps water

Wash and scald spareribs.

Put abalone with 1 cup of hot water in stewing pot. place spareribs, ginger, spring onion, ham and rock sugar on top. Stew over low heat for 2 hours.

Wash mustard green. Blanch in water with salt and oil until done. Dish up.

Thickly slice abalone and place into earthenware. Pour into liquid from stewing abalone and seasoning. Simmer over low heat until liquid is thickened. Add sauce and cooked oil and cring to the boil. Remove abalone and place on top of mustard green. Pour sauce on top.
