Nothing, nothing, nothing is as satisfying (at least with food) as deep-frying. Crisp, light and oh, so rich,

1⁄2 cup finely grated carrot
1⁄2 cup finely grated daikon
1 cup spring or filtered water
splash soy sauce
1/3 sheet toasted sushi nori, shredded
1/3 umeboshi plum
1 1/2 lb. red beets, with greens attached
1 1/2 lb. yellow beets, with greens attached
2 Tbs. olive oil
1/4 cup water
1/2 cup aged balsamic vinegar
3 Tbs. firmly packed brown sugar
Salt and freshly ground pepper to taste
toasted sesame oil
1 cup fine burdock matchsticks
sea salt
1 cup fine carrot matchsticks
8 ounces tempeh, 1-inch cubes
spring or filtered water
soy sauce
1-inch piece ginger, grated, juice extracted
